Honey, Almond Butter, and Banana Overnight Oats

When I am spending the weekends with my family, the workweek is the last thing on my mind. Then before I know it I look at the clock and it’s 8:00 on Sunday night! Monday morning is going to be a hectic one. Getting ready for work and sending the kids off to school are two of the million things that need to get done. I have always been told “breakfast is the most important meal of the day” but who has time for it? It’s days like this where I turn to overnight oats to bail me out. My favorite recipe is my almond butter and banana overnight oats with plenty of our raw, unfiltered honey!

Besides being super easy to make, it’s a great way to sneak in some nutritious foods for the picky eaters in the house! If bananas aren’t a crowd favorite, try different fruits to appeal to the different members of your family.

Mason jars are not required for this recipe, but separate containers are preferred. It helps to portion out the servings and get the ingredients mixed properly. The preferred porridge-like consistency is hard to achieve when using a large mixing bowl. Sometimes on super busy days, I’ll use lidded plastic cups for an easy on-the-go snack!

Anyone who has meal prepped knows that it’s not a fool-proof process. Sometimes the morning is so busy you forget to grab your lunch. Not to worry, these overnight oats can sit up to 5 days in the fridge. Just don’t forget to stir your snack before digging in!

This recipe only takes 5 ingredients. That’s it! Not only does it make my life simple, but it makes it easy to make sure the ingredients I am using are free of preservatives, trans fats, and the like.

One of my secrets to getting the best consistency is to push the mashed fruit to the bottom of the container. This prevents the fruit from browning, preserving the fresh flavor! Make sure to mix before eating to make sure you get all the flavors in every bite. (I don’t mean to nag you like I’m your mother but sometimes you just forget!)

I have made this so many times that I have some tips that might help you out! Use a fork when mashing the bananas. It’s a very satisfying way to smush and helps you to not over smush. Be sure to wait until the end to add whole fruit pieces to make sure the rest of the ingredients are properly blended.

 

 

 

Ingredients

  • 2–4 Teaspoons Pure Southern Honey
  • 4 Tablespoons Almond Butter
  • 2 Cups Oats
  • 2 Bananas
  • 3 Cups Almond Milk

Instructions

On a clean surface arrange 4 bowls / lidded glass jars. Measure out and fill each container with 1 tablespoon almond butter, ¾ cup milk, and ½ cup oats. In another bowl, mash one of the peeled bananas. Distribute the crushed banana equally across the four oat blends. Add one tablespoon of almond milk to each, then stir.
Place in the refrigerator overnight (or 8-12 hours). Before enjoying, top off each treat with banana slices and  1 teaspoon of Pure Southern Honey. Enjoy cold or at room temperature.
