Pure Southern Honey Rosemary Chicken & Potato Skillet

Ingredients
Sauce
Salt & pepper
4 Tbsp Pure Southern Honey
2 Minced Garlic Cloves
4 Tbsp Dijon mustard
1 Tbsp Olive Oil
1/2 Lemon Squeezed
3 Tbsp Balsamic Vinegar
Dish
3 Large Potatoes – (sliced into wedges)
3 Chicken Breasts – (sliced into strips)
1/2 Large Onion, Diced
Bunch of Rosemary
Olive Oil
Salt & pepper
*Use an oven-safe cast iron skillet
Instructions
- Preheat oven to 420.
- On medium-high heat, cook onions and 2 Tbsp of olive oil on stove until browning.
- Remove skillet from stove. Place potato slices in a flat even layer in skillet, drizzle in olive oil and add salt & pepper.
- Cover with foil and bake in oven for 20 minutes.
- While waiting for your potatoes, combine all of the sauce ingredients in a medium mixing bowl. Let your chicken marinate in this sauce for about 10 minutes.
- Take potatoes out of oven, and arrange the chicken strips in an even layer on top and pour the entire sauce bowl over the chicken.
- Add 5 sprigs of rosemary around the chicken slices.
- Cover with and bake for 40 minutes.
- Uncover and bake again for 20 minutes.
